Altopiano Rosso 2020
Practicing organic with biodynamic preparations as well. Chemicals have never been a part of what Matteo's predecessors used to tend the vines. Hand harvested. Destemmed, 24 hour maceration (1 night) and very softly pressed (pneumatic). Spontaneous fermentation. Aged in stainless steel on the lees until April and bottled. Minimal added sulfur.

Vinification: This is Matteo's first release of these Altopiano wines! Made as a very light red, almost a dark rosé, this Pinot Noir is indesputably refreshing! Crisp cranberry and gooseberry notes with just a hint of juicy cherry on the finish. Would be especially fantastic with salmon!
