Vinification: Fruit is certified biodynamic and comes from 25-year-old vines planted in several different vineyards around Lake Neusiedlersee. Spontaneous fermentation with 7 days of skin contact. All stainless steel for fermentation and aging. Aged 7 months on the lees. Does not go through malolactic fermentation. Unfiltered, unfined, minimal SO2.
