Taking care of the plants with homeopathy, energy (yes think Amathus stones buried) and other herbal remedies, Col Tamarie is produced in the most prime position for Prosecco in the region. The soil is rich with limestone, giving the wine a lot of mineral content and citrus smell. Neither clarified nor filtered you see a straw yellow cloudy colour with a fine foam. Bread crust, yellow fruit and citrus notes.
We love it with… 🌮🦐🥒
Grape: A field blend of mostly Glera, with some Boschera, Perera, Bianchetta, Grapariol, Verdiso, and Marzemina Bianca
Region: Veneto, Italy
Vinification: Farmed organically with biodynamic preparations as well. The vineyards are surrounded by woods, olive trees, hedges and fruit trees, to increase biodiversity as much as possible. The grapes are harvested manually in October, when they are completely ripe. The grapes are pressed with a Gaspare Buscemi craft press. Very few wine transfers are made, in order not to lose the lees. Bottled in April with saved grape must from the same vintage to start the refermentation.
