Practicing organic and working toward certification. Hand harvested. Direct-press. Natural fermentation in stainless steel. Re-fermented in bottle with must from original harvest. Minimal sulfur additions and no filtering or fining.

Vinification: Cocai, obtained from the first soft pressing of two Lambrusco varieties, is soft and dry with notes of orange blossom, cherry, and almond skin. The name refers to "Al Cocài", in the Mantua area, which is the cork used to close wine bottles.
