From the producer: For this bottling, fruit came from 38 year old vines at Montinore Estate Vineyards in the Tualatin Hills AVA and was allowed to macerate, on skins, for 219 days in egg shaped fermentors. After draining and pressing, the wine aged for two months in French oak barrels before bottling without fining or filtration. In the glass you’ll find aromas of fresh apricot, ginger and satsuma.” — Jim Fischer + Jenny Mosbacher, Fossil & Fawn
