Salty White 2020
This wine is the true (Theo’s) interpretation of the New Zealand coastline. A blend of Muller Thurgau & Sauvignon Blanc, aged on skins in amphorae. Similar to the Skin Fermented Sauvignon Blanc it isn’t too ‘skinsy’, just enough to add texture and raise the aromatics.

Vinification: All fruit is from tiny vineyards farmed naturally with no chemicals. Spontaneous fermentation, skin maceration, no additions except a small dose of sulfur.
