Spergola, a variety indigenous to the Scandiano area, is an ancient grape variety that has long been confused with Sauvignon because of its color and the style of wines it makes. In this example of the drier and more acidic side of Spergola, Marco has created a vibrant, green apple and tropical fruit toned sparkler using the ancestral method (aka pet nat). Great as an apertif to a long meal or for when you just need a ray of sunshine on a grey Seattle day.
