Cultivated according to the criteria of Synergistic Agriculture and ICEA Organic Farming. Hand harvest, destemmed. Soft crushing, spontaneous fermentation thanks to a pied de cuve of native yeasts. 2 months fermenting on the skins before being pressed. Natural fining and stabilization, no fining agents added. No filtration. Aged on the lees for 5-6 months in steel tanks, stirring every 15 days. Very low amount of sulphur dioxide added before bottling.
