Oliver's Vineyard White 2020
Inspired by the elegant and citrus-forward yet generous whites of Cheverny in France, Gina wows us once again. The Oliver’s Vineyard, located on the south west side of Edna Valley, is planted to several white varietals, including Chardonnay and Sauvignon Blanc. The original vines were planted in 1991 and the vineyard is currently in pursuit of an organic farming certification. Gina, who grew up on a biodynamic ranch and farms her vineyards biodynamically, is helping to make this happen. We get candied kumquat, lemn verbana, and creamy meringue vibes from this one.
We love it with… 🐟🍲🥑
Grape: 60% Sauvignon Blanc, 40% Chardonnay
Region: Edna Valley, California
Vinification: The grapes are harvested separately and also fermented separately, being blended together before bottling. The grapes are foot tread to soak on skins before being whole bunch pressed the next day. The juice is fermented in neutral french oak barrels with native yeast, then aged on lees for 8 months before being racked for the first time for blending, then bottling, unfined and unfiltered.
