Okay, where do we start? Pinot Gris from Dion Vineyard and was picked before the smoke and fires really got to the grapes (do you remember the fires all across the west coast in the disaster year of 2020?). The Riesling is from Elkton, OR, Gillirose Vineyard to be exact. The first time the winemaker has worked with this vineyard. Oh! Apples?! Yes, apples. They're from a local cider house and were fermented in neutral French oak barrels. Quite literally a chimera (or a fire-breathing monster with a lion's head, a goat's body, and a serpent's tail).
