Grape: 41% Charbono, 31% Zinfandel, 18% Carignan, 10% Petite Syrah
Region: Gary Venturi Vineyard, Mendocino County, California
Vinification: Farmed organically; made using Jules Chauvet’s “true carbonic” method to avoid picking up smoke that may have been present on the skins of the grapes. In this method, the juice that seeps out of the clusters is drained from the tanks each day. This keeps the juice from staying in contact with the stems and skins, thus extracting too much tannin and color and making a bigger wine than intended. All juice drained down daily was fermented separately and then blended.
