Vinification: Pinotosh is pressed apple juice that started fermenting. We drained the pinot (did not press) and put the skins in the fermenting apple juice, so they were *very* juicy, probably 25% Pinot Noir and 75% apple juice, that finished fermenting together. Not disgorged.
