Dabinett Cider 2019 (12oz)
Made from fruit from Ontario Orchards, the same location they use for their Northern Spy cider (we had it last year), this year's cider from Wild Arc is full of bright citrus peel notes, warm spices, and a touch of butterscotch. Todd finds that bittersweet apples make for a richer, more textured cider-- the Dabinett in this blend brings that character, and the tart acidity of the Rhode Island Greening balances it perfectly. It was natively fermented and aged in old French oak barrels for 10 months before being can conditioned with wildflower honey to add bubbles.

Vinification: The apples were pressed and blended before being racked to 3 neutral French Oak and 1 Chestnut barrel, where it sat undisturbed for 10 months until being racked and blended for canning. 20ppm of sulfur was added at press.
